I finally got to picking berries off that mulberry tree and made 9 jars of jam. What I discovered, even after including some unripe berries, was that it still needed pectin. Maybe I didn't put enough unripe berries. Anyway, I put the equivalent of 2/3 of a box of pectin, the jam set so it's still loose, but it's not runny. Refrigeration might also help.
That jam is GOOD. I made bread just to put the jam on it. Mmmm jam. But next time I make mulberry jam, I'm going to add ginger just for a change.
It's amazing how much food is just in people's yards and they don't even know it. I showed someone that you can eat plantain leaves (the weed not the bananalike thing) today. And I found yet another house in my neighborhood with the garden so full of eastern prickly pear that it's spilling down the front of their retainer wall. Mmm, prickly pear jelly...
